Hunky Monkey…

I made a new recipe yesterday and I thought I’d share …

It was “for the kids” but ended up being an awesome treat for all!


Hunky Monkey Muffins (make 12 muffins)

2 ripe bananas, mashed by hand

6 eggs, beaten

½ cup butter or coconut oil, melted

¼ c maple syrup,(optional, the bananas may make it sweet enough)

1 tsp. almond extract

½ tsp. sea salt

¼ tsp. baking soda

1 TBSP protein powder (hemp or collagen will be great)

2 TBSP unsweetened cocoa powder

2 TBSP Enjoy Life’s mini chocolate chips

½ c coconut flour


Preheat oven to 350 degrees.

Line muffin cups with unbleached parchment liners (If You Care Brand is best)

Start mixing the wet ingredients in a large bowl, then add the dry ingredients.

Take ¼ c scoop and fill each muffin cup.

Bake for 40 minutes.

Cool completely, then enjoy!!!!
